- 2 cups cooked, shredded chicken
- ½ cup buffalo sauce
- ½ cup cream cheese (softened)
- ½ cup shredded cheddar cheese
- ¼ cup ranch dressing (or blue cheese dressing)
- 2 green onions (chopped)
- 12 egg roll wrappers
- 1 egg (beaten, for sealing)
- 1 cup vegetable oil (for frying)
- Ranch or blue cheese dressing (for dipping)
Instructions
Prepare the Filling
- In a large bowl, mix shredded chicken, buffalo sauce, cream cheese, cheddar cheese, ranch dressing, and green onions until well combined.
Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface in a diamond shape.
- Place 2 tablespoons of the buffalo chicken mixture in the center.
- Fold the bottom corner over the filling, then fold in the sides.
- Brush the top edge with beaten egg and roll tightly to seal.
Fry the Egg Rolls
- Heat oil in a skillet over medium heat.
- Fry egg rolls in batches, turning until golden brown (about 2–3 minutes per side).
- Remove and place on a paper towel to drain excess oil.
Serve & Enjoy
- Serve hot with ranch or blue cheese dressing for dipping.

- Air Fryer Option: Spray egg rolls with oil and air fry at 375°F (190°C) for 8–10 minutes, flipping halfway.
- Baking Option: Brush with oil and bake at 400°F (200°C) for 12–15 minutes.
