Instructions
- Prepare the sweet potatoes – Peel the sweet potatoes and slice them into waffle shapes using a mandoline slicer.
- Soak the fries – Submerge the sliced sweet potatoes in cold water for 30 minutes to remove excess starch. Drain and pat completely dry.
- Coat for crispiness – Toss the fries with cornstarch, olive oil, and seasonings in a large bowl.
- Choose your cooking method:
- Oven: Preheat to 425°F (220°C), spread fries in a single layer, and bake for 20-25 minutes, flipping halfway.
- Air Fryer: Preheat to 375°F (190°C), cook in a single layer for 12-15 minutes, shaking halfway.
- Deep Frying: Heat oil to 350°F (175°C), fry in batches for 2-3 minutes until golden brown, then drain on paper towels.
- Serve hot with your favorite dipping sauce!
